Today's breakfast is custard buns and it’s a busy morning. This bun has a sweet and savory custard filling with fluffy bread. Soft, sweet, and delicious with all-purpose custard filling. It’s More than just bread, it can be made into moon cakes, Chinese custard buns, and pastries are fine. 


Ingredients:

3 egg yolks


20g low-gluten flour


Corn starch 15g


20g milk powder


30g white sugar


Milk 150g


Instructions:


Add sugar to egg yolk and mix well


Sift in low flour, cornstarch, and milk powder


Pour in the milk in 2 batches and stir until fully incorporated


Pour into the pot and keep stirring on low heat, then stir fry until it becomes a dough, do not fry too dry


30 grams is divided into 9 equal parts for spare


9 frozen Brioche Buns thawed at room temperature for 3-5 hours


Dough doubled in size


Take a piece of dough and press to exhaust


Form into a round shape, cover with cling film, and rest for 15 minutes


Roll out the dough into an oval shape


Place custard filling on 1/3, fold in half, and pinch the edges


Use scissors to cut 3 edges of the dough


Put it on a baking sheet and put it in the oven for 2 fermentations


Put a bowl of hot water at the bottom of the oven to help ferment


The dough will rise to 1.5 times its original size in about 30 minutes


Remove the pan and preheat the oven to 325°F


Brush a layer of egg wash on the surface of the bread


Bake in preheated oven at 325°F for 18 minutes


Take the bun out of the oven.
