Ingredients:

All-purpose flour: 200g

Milk 🥛: 110g

Granulated sugar: 25g

Instant yeast: 2g

Butter: 3g

Food coloring: appropriate amount

practice:

1. Put all the ingredients except the food coloring into the mixer and mix on low speed until the dough is smooth

2. Divide the dough into 9 pieces, 35g each, and make the rest of the dough for eyes, ears, mouth and nose

3. Exhaust and shape the 9 pieces of dough, knead them into a round shape

4. Adjust the color to make eyes, ears, mouth and nose, and use a shape cutter mold, which is very convenient; if you don’t have one like me, then rub your hands together and use toothpicks and scrapers. Dip some milk or water and it will stick together

5. After completion, ferment to about 1.5 times the size

6. Heat water in a steamer. After the water boils, put the steamed buns in the steamer, turn to medium heat, steam for 15 minutes, turn off the heat and simmer for 5 minutes before lifting the lid

🔆Tips for watery skin:

1. The dough should be kneaded in place: Knead until the surface is very smooth, and the cut surface is also fine and air-free. I use Kitchen Aid, stir at 1 speed to form a dough, then turn to 3 speed to stir, about 10 minutes, it can be kneaded in place

2. The exhaust must be exhausted: the rolling pin must be repeatedly folded to exhaust the air

3. Fermentation should be in place: 1 fermentation is enough. It is better to operate at low room temperature, and the dough will not ferment quickly. If the room temperature is high and the shaping speed is not fast, you can store the unused dough in the refrigerator. After it is done, I use the fermentation function of the square box, 95F, and it will reach 1.5 times the size in about 30 minutes
