Spiky potatoes are very common in Sichuan, it's as common as hot and sour noodles. The most common stalls are definitely seen in front of the school, students would always love to buy one plate in front of the schools, the delicious and spicy smell makes everyone drools. However, the oil from outside is not too secure compared to the oil at home. So it's better to DIY one plate of spiky potatoes ourselves, both cheap and delicious, one kind of snack that I love a lot.

After cutting the potato into strips, put them in the bowl with cold water one by one and soak in the water. The reason why we are doing this is that there is high level of starch in potatoes, and they are easy to change color after the potatoes get in contact with the air.
After cutting a big serving of strips, use cold water to rinse the potatoes 2 times before we drain the water. The purpose for this step is so we can wash away the starch at the surface, and that they will not stuck together when we are frying them.
Pour oil into the pot, heat up the oil. I also recommend using air fryer for this step. When the oil is heated up to medium well, we can put in the potato strips that was drained inside and start frying. We don't need too much oil in this step, to prevent the waste that might happen. Potatoes are easy to be cooked, depending on your taste, if you like crispy ones you can fry for a shorter amount of time, if you like soft and mashy ones, you can fry for a longer time.
After frying, we put them in a big bowl, mix in the following spices: salt, soy sauce, vinegar, garlic mud, chili oil, chili powder, Sichuan peppercorn oil or powder, chopped green onion, cilantros, cumin powder, five spice powder. Mix them very well. If you like spicy, you can also put some small red chilis inside. Lastly, sprinkle some sesame seeds at the top.
