Shrimp pasta is one of the most underrated noodle-based dishes, but that doesn't mean that we should just accept it as so. I've come up with this recipe as a tribute to one of my favorite foods, and I can't wait for you all to try it out for yourselves - because there's nothing better than pasta!
Ingredients:
Salt
Pepper
Pasta noodles
Onion
Garlic
Red pepper flakes
Jalapeno peppers
Olive oil
Plum tomatoes
Whole shrimp
Heavy cream
Parsely
Parmesan cheese
Cilantro
Instructions:
-Mix 1 teaspoon each of salt and black pepper into a pot of water on a stove before boiling.
-Once boiling, prepare the noodles according to package instructions. Cover them with a colander and pour the water over them. Rinse them until your water runs clear downstream.
-Strain noodles when finished, leaving as much liquid in the bowl before removing the mixture with a large colander spoon until fairly dry to prevent stickiness
- Set aside
-Mince the onion, garlic, red pepper flakes, and jalapeno peppers. Stir in a large skillet over medium heat.
-Add in the olive oil and cook until the onions start to turn translucent.
-Fry plum tomatoes (first cut them in half) and the whole shrimp.
-Add them to the pasta (or water) along with salt and black pepper to taste. Bring mixture to a boil, cover, and let simmer for 10 minutes. Uncover and add in noodles.
-Stir well to combine until the pasta is coated.
-Remove from heat, stir in heavy cream and parsley before serving immediately.
- Garnish with grated Parmesan cheese if desired! And sprinkle some cilantro leaves!
