Refreshing Summer Yogurt Salad🥗
It's already autumn but it's still sultry. When I don't want to start cooking, I will still fill up my stomach with a different salad mix. I want to share a vegetarian salad rich in dietary fiber and enough protein today. It is a powerful tool for brushing fat, and the method is super simple.
As for vegetables, I prepared cucumbers and tomatoes, refreshing to eat in summer, celery to increase fiber, and sweet peppers that are especially suitable for eating raw (without destroying nutrients). In terms of protein, we rely on chickpeas. You can also replace them with your favorite vegetables and beans, as long as the ratio is controlled at 3:1. Celery is recommended to be sliced ​​thinly, it will be chewier.
I made the sauce with yogurt, the concentration doesn't really matter, as long as it's sugar-free original flavor. If you use a thinner yogurt such as Kefir, you can use it directly. If it is Greek yogurt, it is recommended to pour an appropriate amount of olive oil and lemon juice to dilute it. Then add salt and black pepper to your taste, mix well, and pour over the ingredients. I also personally like to add a little garlic powder and a little (about 1/2 teaspoon) of yellow mustard for flavor, and the sauce is summed up as follows:
Yogurt➕(olive oil)➕salt➕black pepper➕(garlic powder)➕(yellow mustard)
