Ingredients:
Red yeast rice cake (6 pieces)
Material:
Kokuho Rose Rice 300g
2.5~3.5 grams of red fermented rice
170 grams of water
135 grams of golden sugar
Low-gluten flour 55 grams
Yeast powder 4 grams
Black Rice Cake (6 pcs)
Material:
Kokuho Rose Rice 260g
40 grams of black rice
170 grams of water
135 grams of golden sugar
55 grams of low-gluten flour (if you think it tastes too sticky, you can add a little more flour, I think it should not exceed 10 grams)
Yeast powder 4 grams
Practice:
1️. Wash and soak the rice the night before.
2️. Drain the rice, put it into a wall breaker, add water to make a slurry, add the rest of the ingredients, beat well, and ferment until it doubles in size.
3️. Bring the steamer to a boil, stir the rice milk into the original shape, pour it into a small cup, put it in the steamer, cover it, and steam for 20 minutes.
Note: The water used to soak the black rice must be kept to replace 170 grams of water.
