Tiramisu is a rich, creamy, coffee-infused cake layered with mascarpone cheese, ladyfingers soaked in coffee or brandy, cocoa powder, and chocolate shavings.

Finger biscuits:

1 egg, 30 grams of sugar, 30 grams of low flour, lemon juice

Cheese paste:

Finger biscuits:

1 egg, 30 grams of sugar, 30 grams of low flour, lemon juice

Separate and beat the egg yolks and whites, add 10 grams of sugar to the egg yolks, and beat until the color becomes lighter, and the custard is stacked when you lift the beaten eggs

Egg whites with lemon juice, add the remaining sugar in three additions, beat until stiff

Pour the protein into the egg yolk, mix well, then sift in the low flour, mix well, put it into a piping bag, and squeeze it into the baking tray

Oven 340F, bake for 15 minutes

Cheese paste:

150 grams of mascarpone, 130 grams of cream, 30 grams of sugar

Mascarpone is softened at room temperature, add 15 grams of sugar and beat until smooth

Add 15 grams of sugar to the cream and beat until 70% distributed

Mix the two ingredients evenly, and put them in a flower bag

Coffee liquid:

2 grams of instant black coffee, 40 grams of water

Roll the finger biscuits in the coffee liquid, put them neatly into the mold, squeeze the cheese paste again, make two or three layers, cover with plastic wrap, refrigerate overnight, and sprinkle with cocoa powder before eating
