Last night, I baked an avocado banana cake for breakfast this morning. The sugar was replaced with honey. Avocado contains natural oils, so there is no need to add any oil.
🥑🍌Ingredients (in two parts):
dry part
1-1/2 cups AP flour
Baking powder 2 tsp
1/8 tsp salt
wet part
1 avocado
1 banana (150g)
2 eggs
honey 2 tbsp
1 cup buttermilk (can be replaced by greek yogurt)
halal Vanilla extract 1 tsp
🥣 How to do it:
Add the crushed avocado and banana to the rest of the wet ingredients and stir well, then fold into the flour mixture. Mix well, sprinkle with chopped toasted walnuts and bake in the oven @350F for 30 minutes or insert a toothpick and pull it out without sticking.
Bake it, let it cool, slice it and pack it in a fresh-keeping box, bake it in a small oven before eating, and sprinkle some powdered sugar on it for children to eat.
Sometimes dark chocolate beans are added to make muffins for children to eat by themselves.
