  • High Gluten flour 400 g
  • Sugar 35 g
  • Edd white 1
  • Salt 4 g
  • Heavy cream 200 g
  • Milk 95 g
  • Yeast 5 g

Instructions:

  1. Prepare the Dough:
    • Pour all the ingredients into the kitchen machine, beat at low speed to form a dough, then turn to medium speed to high speed to beat into a thin film, take out and arrange into a round shape, cover with plastic wrap and let rest for 15 minutes.
  2. Shape the Buns:
    • Cut the relaxed dough into 16 equal parts, press each small piece of dough to deflate, then roll it into a round shape and place it in the baking pan.
  3. Fermentation:
    • Put a bowl of hot water at the bottom of the oven, put the baking sheet into the oven to ferment, about 1 hour, until it rises to 1.5 times its original size.
