Almond butter cookies
Everyone loves this biscuit. I made two flavors and gave it to my friends.
The method is very simple, the only thing to pay attention to is that the room temperature should not be too low
Otherwise, your hands will be cramped 😂😂
100g unsalted butter
45g powdered sugar
25g whole egg liquid
70g low-gluten flour
55g high-gluten flour
20g almond flour
The sugar and the butter softened at room temperature are fluffy and white, and the egg liquid at room temperature is added in batches and sent evenly (I usually heat the egg liquid to about 25 degrees). Sift in all the flour and salt, mix well, put into a piping bag, keep the room temperature at 22~25 degrees to squeeze out patterns, if the temperature is too low, the batter will be too dry and difficult to squeeze out. For matcha and cocoa flavors, replace low-gluten flour with 5~10g matcha powder/cocoa powder.
